Cashew Chicken with Paleo Cole Slaw

	                                INGREDIENTS:
Cashew Chicken:
- 2 lbs ground chicken (I used 1lb ground chicken breast and 1lb ground chicken thigh)
 - 1 medium yellow onion diced
 - 1 large carrot peeled and then shredded (use a cheese grater)
 - 1 red bell pepper diced
 - 2 handfuls (or more or less) roasted cashews roughly chopped
 - 2T coconut aminos (I use THIS - can be purchased at Whole Foods)
 - 1T garlic powder
 - 1t powdered ginger
 - 1T coconut oil
 - salt to taste
 
Paleo Cole Slaw:
- 2 packages broccoli slaw mix
 - Handful (or more or less) of roasted sliced almonds
 - 2-3T Paleo Mayo (Recipe HERE)
 
DIRECTIONS:
Cashew Chicken:
- Saute the diced onion, shredded carrot, and diced bell pepper in 1T coconut oil over medium-high heat until all are soft (about 5 mins)
 - Add the ground chicken to the pan
 - When the chicken is all cooked, add in the salt, garlic powder, powdered ginger, and coconut aminos. Mix everything together.
 - Add in chopped cashews. Give a good mix.
 - Remove from heat and ENJOY!
 
Paleo Cole Slaw:
- Add all the ingredients to a mixing bowl
 - Mix until everything is coated
 - ENJOY!
 
OTHER OPTIONS:
- Top the Cashew Chicken with some sliced green onions (scallions)
 - Make lettuce wraps with the Cashew Chicken
 - Put the Cashew Chicken on top of some rice
