Why Paleo?

I found the book, "It Starts with Food" in the Summer of 2013. I kept hearing rave reviews about it on Facebook. Lots of people I knew read it and did the 30-day program. Since I have always been interested in health and fitness, I decided I would go to the store and read the first few pages. If I liked it, I'd buy it.

I bought it. The first few pages SHOCKED me. People with ADHD, Crohn's Disease, IBS, Diabetes, and other issues, significantly reduced their symptoms just by changing their diet alone...and most of these changes occurred in just 30 days! I am lucky that I am not plagued by any of these issues, but I figured such dietary changes could only benefit me.

I read the book and decided I would do their 30-day program which consisted of no dairy, no gluten, no wheat/grains, no added sugar or fake sugar, no legumes and no alcohol. I know, you are thinking this is so restrictive, what can you eat? Guess what - you can eat anything that is REAL...meat, seafood, poultry, eggs, veggies, fruit, nuts, avocados, olives, coconut, etc. You eat protein, veggies, fruit, and FAT at every meal.

Yep, there is that 3-letter word, FAT. The word we all fear. Believe me when I say I used to be the biggest fat-phobe. Anything with any fat in it was off limits. I didn't use olive oil, I didn't eat nuts. I ate a lot of veggies and low-fat foods, also known as diet foods. But did you know all those diet foods have TONS of added sweeteners to make them taste better? And sugar is highly addictive, so those sweeteners just make you crave more sweet things. You don't have to believe me but once you read the book, you will get it! 

Anyways, I was terrified of FATS. And according to the book, I was supposed to eat fat at every meal. Honestly, I had anxiety and heart palpitations just thinking about it. What if I got fat or gained a ton of weight? I decided, if I was going to do the 30-days, I WAS GOING TO DO THE 30-DAYS. If I felt uncomfortable at the end of it, I would go back to my old ways.

Guess what? That never happened. I didn't gain any weight, actually lost some. I even got my mom to do it with me and she lost 10 lbs, and we sometimes eat 3 avocados in one day!

We found the 30 days to be life-changing. We became more aware of what we put into our bodies (...have you ever actually read the ingredients list on some of your favorite snacks??) and more aware of our relationship with food (...I'm talking to you "I'm bored so I am just going to eat.").

There is no limit to how much you can eat on this 30-day program. You eat healthy, whole, real foods until you are full. You don't count calories or weigh your food, because when you eat real food, your hormones balance out and your body knows when it is and is not hungry.

This book changed my life and the way I see food and fuel my body. I haven't gone back to my old ways (...don't get me wrong, I do enjoy some brownies and more indulgent food here and there, but I do not crave them the way I used to). I sleep well, have tons of energy to workout, no longer have acid reflux (gross I know, but so true!), eat more than I ever have, and most importantly, I am happy!
